Grilled Fish Tacos with Pineapple-Ginger Salsa and Spicy Lime Cream

Fun Fiesta Tip

The kids all went fishing in Gorton's sea to catch their dinner preparation shopping lists. The fastest shoppers won bragging rights and first swings at the pinata. We made fun "fish taco" invitations to invite neighbors and friends; we requested that every one bring their favorite Gorton and Ortega products. I greeted the Seniors with a Sombrero and the Senorita's with a flower for her hair. We decorated with colored twinkling lights and tissue paper flowers. The kids decorated the pinata; filled with chili mango and tamarind candies. We deep-fried Ortega Tortillas into chips, served with Ortega dips and salsa. After each coarse we danced around the tables; playing "mariachical" chairs. One shake of the maraca earned immediate table attention; for when someone needed the "spot-light". Silly prizes; can of chilies, guacamole powder, etc. were given to best fiesta dressed guests!

*1 lime juiced + 4 additional tsp lime juice;divided

*2 tsp. + 2 Tbsp. honey

*1/4 cup + 1/8 cup cilantro

*2 cups green or red cabbage, thinly sliced

*1/4 cup sour cream

*1/4 cup mayonnaise

1 tsp Ortega Taco Seasoning

*1 1/2 cups fresh pineapple, finely chopped

*1 avocado; pit removed and chopped

*2 Tbsp. purple onion, finely minced

1/2-1 tbsp Ortega Jalapenos, finely minced

*1/4 tsp freshly grated ginger

In a medium sized bowl combine 2 tsp lime juice and 2 tsp honey. Add 1/4 cup cilantro and cabbage; mix until well combined. Salt and pepper to taste.

SPICY LIME CREAM: In a small bowl combine and stir until smooth; sour cream, mayonnaise, Ortega Taco Seasoning and 2 tsp lime juice.

PINEAPPLE GINGER SALSA: In a medium size bowl combine; juice of 1 lime, 2 tbsp honey, 1/8 cup cilantro, pineapple, avocado, onions, desired amount of Ortega Jalapenos, and ginger. Stir until mixed. Salt and pepper to taste.

Prepare your favorite; 2 packages of GORTON'S Grilled Tilapia (6.3 oz), or GORTON’S Grilled Salmon (6.3 oz), or GORTON'S All Natural Grilled Fillets (7.6 oz), according to the directions on package. Warm ORTEGA Flour tortillas or ORTEGA Yellow Corn Taco Shells according to directions on package. Fill with desired amount of cabbage, Gorton's Grilled Fish(cut into strips), Spicy Lime Cream, and Pineapple Ginger Salsa. Serve and ENJOY!

Serves approximately 8 tacos.
